Only shops that specifically cater to tourists are usually open on Sunday. This goes for Rome, Florence and smaller Italian towns like Citta della Pieve. Even shops that are usually open on a Sunday will probably be closed on August 15th and many shops, especially in smaller towns, will close from August 15 until Sept. 1 or so.

August 15 definitely NOT -- that is a major Italian holiday. Normally, shops are open til about 3 pm on Sundays (like in Rome) but going to a smaller town and on a holiday, don't count on it. Perhaps you can look up the information prior on-line and get the hours of some of those places.
