Sundays.
From 12:30 - 3:30 daily in most places.

You will find some places go from 1:00-3:30-4:00/
It really depends on what region you will be in and what season.
The south is usually a lot more laid back, while the north is right on the dot from 12:30 - 3:00.
Some cities, one being Varese, even have the first Sunday of every month where everything stays open and there is also a special market in the center.
You may find that shops are closed on Monday mornings too.

There is no general rule, except the fact that all close at night. In touristy areas shops are usually open the whole day 'round, until 10 pm, everyday including Sundays. If you are off the touristy areas, than the sops may open sometimes between 7 and 9 am, close at 1 pm and open again at 3-4 pm than close down for the night sometime between 7 and 8 pm, yet many shops skip the noon pause and keep working from the morning to the evening. Besides, different cities have different habits in terms of resting days, for instance in Milano clothing, shoes and similar shops are often closed on Monday morning, while in other cities you might find they are often closed on Wednesday or Thursday morning. There is no general rule. Yet, if you are planning your shopping at the big firms of fashion, than these places have toursit-friendly poening hiurs, this means that the are ALWAYS open (except, for instance, on Monday morning in Milano...).
