Sorry - you're going to 4 COUNTRIES and you want to know the weather?
Spain - esp the south will range from warm to hot (perhaps 90 degrees) - except for mountains, which can be cool.
Italy weather will vary by the part you're in - from quite warm in Sicily to coolish in the northern mountains.
Much of France will have spring weather - so you could have a high of 75 or 55.
London will probably be cooler with a high in the 60's at most.
It will rain anywhere except southernmost Spain.
Take layers, a sturdy folding umbrella and 2 pair of waterproof walking shoes.

We have been in Paris in May when the weather hit 90 degrees. We have been in Paris in May when the weather was in the 50s. Check the weather averages for May for the places you plan to visit and plan accordingly. Anything can, and will, happen.
