The markets will be smaller, but they are open year round. Arles will still have a really big market every Saturday. I wouldn't say that the produce sellers have less to sell... just different things to sell. Our 'winter' vegetables are just as pretty to look at as the summer ones... big orange and yellow squashes, punpkins, deep purple eggplants, huge white cauliflowers, potatoes of various hues and every kind of apple and pear under the sun, along with grapefruits and avocados from Israel and Spain.
There will still be stalls selling fabrics and tablecloths as well.

One large market that I hadn't heard much about was at Cannes--a vast indoor assemblage of fruits, vegetables, fish, meat, chicken, cheeses, flowers and plants...you name it, they had it. Parking is available in a nearby underground lot. The market seems to be very much for the locals, not the tourist trade. We went with a French friend and found it all fascinating--and the melons we bought were wonderful.
