Stay at a hotel near the airport (done this at other airports, not Gatwick). If you go to
http://www.baa.co.uk/main/airports/gatwick/
click on book hotels for a list of hotels at the airport and also nearby (there are other websites that would have additional hotels; this site at least gives you a few ideas). I'd get the most comfortable hotel I could afford, and one that has a free shuttle service.

I can't imagine arriving at 10pm at night...I'd want no hassles whatsoever!

In the South terminal of Gatwick, the Hilton has the advantage of being physically connected to the terminal...you can wheel your luggage cart straight into the hotel (after walking down about 1/4 mile of connecting corridors). The Hilton is fine and you should be able to get a fairly decent rate there, either through the Hilton website or by calling direct.

Le Meridian hotel is connected to Gatwick's North terminal. I have no personal experience with this hotel.
