Valencia and Baleric Islands Itinerary suggestions for May travel

Attending a conference in Valencia in the Spring.
Have travelled to Madrid, Sevilla, Granada, Barcelona, Jerez and Tenerife previously.
Thinking to include Cordoba/Toledo and Baleric Islands.

Thoughts on Itinerary after Valencia. Which island or islands and can Cordoba or Toledo be incorporated or are we spreading ourselves too thin?

Traveling with 4 adults, two couples.

Are you interested in historic sites or a sun vacation.. because we just had an amazing week on Mallorca in Cala D'or( about an hour from Palma) .. not much in terms of historic sites. but beautiful water,, beaches , coves, great food, cheap wine,, and no rowdiness like in the bigger town/ cities... it was a vacation from our vacation ( four weeks , London Dublin and Paris.. so for us a break from amazing museums and cathderals etc was welcomed)

Ibiza is a lovely island. I think since it is low season you can play this by ear and wait to see what the weather brings.

Cuenca is easily accessible from Valencia on the AVE... takes about 40 minutes. ..and then to Madrid to get to Toledo.

You don't say how much additional time you have..

Thank you Lisa and Justine.
Thinking to do some sightseeing from Valencia, Cuenca is on our to do list and off to an Island retreat.
Four days in Valencia and probably 5-6 in an island or two.
Is Ibiza too hip and young we are all active seniors...young sixty somethings?!
Keep hearing about Formentera and Menorca, any thoughts?

Formentera is going to be very quiet pre season, but that may be what you want. Menorca is a great island with the young party scene along the south coast in Cala'n Porter, Binibeca, Cala Galdana etc. although this last attracts lots of families too.

Ciudadela is the old capital of the island before Mahon and is a great place to stay, with lots of choice to stay and eat, especially down by the old harbour.

Ibiza has its nightlife centred around San Antonio and parts of Ibiza town, but the rest of the island is gorgeous and worth seeing.

With only 5 -6 days, I would pick one place and explore from there, especially as your arrival and departure days might cut into this. My choice, because I love the place, would be Mallorca and providing you avoid the party towns, Palma Nova, Magaluf, Arenal along the bay, you'll discover a lovely island with lots of history, good choice of hotels and restaurants.

I tend to gravitate towards the north of the island and have been holidaying there for years.

The islands are not going to be at their max party stage in May.. Ibiza, Mallorca, Formentera, Menorca.. all lovely places. choose one.. you can't go wrong. But it will be fairly quiet and more pleasant, IMO, than higher season.

One can visit Formentera for a day trip from Ibiza.
