I wouldn;t characterize the Hamptons in August as laid back. More frantically trendy/busy - esp on weekends.
You will also need a car - since the B&Bs are in the town and not at the beach (for which your B&B would have to get you a sticker).
How long are you planning on staying? And what budget range are you looking at?

I agree -- Southampton is crazy on summer weekends, and August is the worst.
Consider a mid-week visit if you're seeking a laid back atmosphere.
(Also don't have sticker shock -- August prices are sky-high and some places require a 3 night minimum.)

It may be frantic to GET to Southampton in August, but once you get there, Southampton is a lot less frenetic than some of the other Hamptons. A Butler's Manor consistently gets the best reviews in Southampton if budget is not an issue. 1708 House is also very nice (more an inn than b & b).
The Enclave Inn is a chain of motels that has 1 location in Southampton, across from the college on Old Montauk Highway. It's much more casual and will be a lot less expensive. I think the Wainscott or Bridgehampton locations may be nicer motels, but the one in Southampton is closer to the water. enclaveinn.com
If you really want laid back, you might consider Shelter Island instead.
