Possible Schedule for 5 days in Kauai

We drove to Princeville from Lihue and that was about 45 minutes. It should be just a little over 1 hour from the Sheraton. (about 40-45 miles)
As for Princeville dining, the hotel itself has a more elegant feel, but people are certainly around in shorts & t-shirts. I don't think I'd walk around in my bathing suit. Does that give you a better idea? The bkfst buffets are pretty expensive. If they don't discount for children I don't think I'd do that - depending on how much your kids eat. If that's your thought, then I would just grab something for the ride to Princeville and have lunch there. That's probably actually cheaper than breakfast.
There are bathrooms right by the pool where you can change if needed. I thought the view from there was fabulous - of course you can get the same view from other places along the North Shore as well. (and I am referring to a July visit)
As for the falls, just be sure you know exactly where they are supposed to be. If I remember correctly, I think one of the ones you mentioned is the falls that are below the road - you can only see if you pull over - I think. But you wouldn't need to hike to see them.
I agree on 1 point that was mentioned earlier - call Princeville before you drive up there to check on the weather. It could very possibly be quite different than where you are and probably not worth the drive (with the kids) on a rainy day. Just my opinion.

Salt Pond Beach is also family oriented.
Nice snorkeling and a good view of the sunset in the winter months.
Another good snorkel beach it the small one right in front of The Beach House on the way to Spouting Horn.
A Polihale sunset is also pretty nice but the beach is not a place where young kids should be swimming, especially in the winter months.
Polihale is just, well it's Polihale.
We saw a poop load of whales playing off the shore, midway out to the horizon. Amazing whale watching setting.
Hit "The Brick" on the way back ot town for some good pizza.
We've hiked to the top of "Da Big Guy" <The Sleeping Giant> a few times and found it to be fairly easy for 2, middle aged adults.
Some long uphill grades that can be hiked up using a "switchback" method to take small bites out of the angle.
It can get slippery after a rain. Remember the scene from "Romancing the Stone"? There is one stretch where if you fell you could slide on back down the path...but not off a cliff like Turner/Douglas.
We've hiked it in Chacos with the lug sole. No big whoop. Not as rocky as the NaPali Coast hike. Grab a stick at the trail head.
Once you reach the first stop area, you may not want to go all the way to the top of his head with 2 young ones because the drop off is pretty steep on one side.
360 degree view of the entire CocoCoast, Mt Wally, King Kong, Wailua River.
For a short cut, park behind the mountain on, I think Lokilani. Only takes about 45 mins to get to the top from there vs the other trailhead.
