Moms always like Broadway shows. Tea at the Plaza Hotel is nice too.
If it's a nice day, go to the Met and go to the rooftop bar and have a cocktail overlooking the treeline of Central Park.
If they are up to it, you can't beat a great half-day at a spa. The Origins Spa at chelsea piers is nice. Bliss is best but hard to get into and expensive.
A boat ride on the Circle Line is a great way to get great views of the city

The statue of liberty is a must. You don't have to go out to it. You can see it from the shore in Lower Manhattan. Times Square is an amazing place to see - while you are down in the theater district you can walk around. Many people love the boat trip around the island.
For such a short trip I'd highly recommend the tours of upper and lower manhattan -- that way you get a bit of a look at all of the highlights -- for example, Chinatown, Brooklyn Bridge, the Park, Greenwich Village, St Patrick's Cathedral, Rockefellar Plaza and much more. Hope you have as much fun as we did on a 3-day trip in February.

*Take them on the Staten Island Ferry. It offers a great view of the Statue of Liberty and the NY skyline. And, the ride is FREE!
*Take them on a walk on Fifth Avenue and around Rockefeller Center.
*Take them to the top of the Empire State Building.
