I booked a last-minute (2 days before) package to Palm Springs on Priceline a couple years ago and got a great deal. I wouldn't recommend waiting that long to book though!
I know Site59.com is well-known for their last-minute packages. Site59 and Travelocity are one and the same. If you find a package that works for you on Site59, here are promo codes to try: CWKLY50 which is $50 off packages over $400; if that hasn't expired, use SL25 for $25 off any package. Just got that email yesterday.
Check both sites to see if there are packages with your dates and budget.

I have used Site59.com with great success. When last minute airfares (48 hours in advance) have been $1,000 + on the airline website, I have gotten a deal for half that including a rental car on Site59. You can't just get airfare with them though. It has to airfare and hotel or airfare and rental car.
