You might want to see if those even have availability. 4th of July weekend is probably the most popular weekend for Destin.
I would recommend renting a condo. You can find better prices for a lot more space. I just got back from Seagrove Beach, which is right next to Seaside and only 10 minutes away from Destin. These are the beaches of South Walton, and I think they are better than Destin. We rented our condo thru Garrett Realty, www.garrettrealty.com, and were very pleased.
Resortquest, www.resortquest.com, rents a lot of condos in Destin. Look at vrbo.com, too.

Embassy Suites is in the Miramar Beach portion of Destin, which is slightly more residential and quiet than the Sandestin portion.
Four Points is a Sheraton, correct? I've only stated in Ft. Walton once and I don't really remember much about it.
Take a look at this place: http://hotels.bookit.com/florida/des...=&DEP_DATE_HM=.
It's called the Beachside Inn. It's in the Crystal Beach section of Destin, which is really quiet. However, it's just a 3 minute drive to the huge shopping complex with the Bass Pro Shop, etc., and a bunch of restaurants. I've had friends that stayed there and really liked it. We stayed at Nantucket Rainbow Cottages in the Crystal Beach section and liked that area.

I think Destin has lots more to do, more restaurants, more shopping, closer to better beaches, etc. We only stayed in Ft. Walton once, on our first trip to the Panhandle, and Ft. Walton felt "older" than Destin.
I know you need to be able to cancel on short notice, but it's a shame because one of the attractions of this area is that it has so many nice condos. In fact, you might even consider looking for a condo when you are 72 hours out but can still cancel the hotel.

I have stayed a few times at the Embassy Suites in Destin. It is not on the Gulf, but across the street. The Sheraton is directly on the gulf.
The Embassy is much newer, and has ES' usual free breakfast and evening reception. ES is closer to outlet shopping.
