I second the Sasha & Olivier recommendation... another similar, good, hip spot that's off the radar (but often in fashion mags), around $100 for a cut, and in the Union Square area is Tosler Davis - I love Thea for haircuts, Bryan for color, but I don't think you'd go wrong with anyone there.
