Figlmuller - (but go to the original - not the new one around the corner. The one described here sounds like the new one.)
When in Vienna do as the Viennese do and indulge in Wiener Schnitzel, the delicacy most associated with the romantic city. Reputed to serve the biggest and best schnitzel is Figlmuller's, next door to St Stephen's Cathedral, a wine tavern where the long tables are always packed with hungry customers sampling the golden-brown schnitzels, that overhang the plate. Open daily for lunch and dinner. Figlmuller is closed during August.

You did not specify the level of quality and price that you expect.
Here a few thoughts.
Inexpensive
Figlmüller is indeed known for Wienerschnitzel, which is mainly breadcrumbs and shortening. Comes close to Kentucky Fried Chicken and is therefore popular among Americans. Basically not a Vienniese, but an Italian dish.
Another inexpensive option is the Gulaschmuseum. Gulasch is basically a Hungarian dish, but also very popular in Vienna.
For rustic Vienna food, go into ANY of the five or six dozens Beisls - the menu is simular, and so is the quality of food.
A more unusual Vienna food tradition are the open-faced sandwiches which are sold at many places. The biggest sandwich place is Trzesniewski.
The most typical Vienna food is dessert. Spend several afternoons in those typical "Kaffeehäuser". They serve wonderful desserts and other fare. My favourite Kaffeehaus is Diglas, but there are many others.
Intermediate
If there is an entrée which is typical for Vienna, then it is Tafelspitz. And if there is one place that makes a three-course menu of this dish, then it is Plachutta. You can choose between a dozen or so cuts of beef there. You eat the soup, then the marrow, and then the beef. Delicious.
Some say Leopoldauerhof is equally good as Plachutta.
Expensive
There are several Michelin-star awarded restaurants in Vienna. My personal favourite is the RieGi. Modern, innovative cuisine.

We also enjoyed Griechenbeisl -- both as tourists and when we lived in Vienna. The food is fine but the history of the place is what really interested us.

we couldn't get into the Griechenbeisl, but did find a table at the pub next door. [sorry, can't remember the name]. we were amused to see that the food was brought in through the front door and when we asked, we were told that it came from the Griechenbeisl.
it didn't suffer from its journey.
one culinary experience that we had that we wouldn't have missed was the tour of the Heuriger [wine pubs]. the wine in proper Heuriger is their own - shown by a fir branch outside over the door of the gasthaus.
take the train/ bus to Grinzing north of Vienna and wander round a few of them. the protocol is to drink their wine [usually white] accompanied by the same amount of mineral water. some of them have full restaurants, others have buffets from which you can take your pick. it a great way of spending an afternoon/evening. there may be music and or singing - if you have too much, possibly coming from you.

For authentic food try <i>Stomach</i> which is not in the inner ring but is just a couple of blocks from the street car line.
