I guess it depends on what you mean by "good ambiance." I enjoyed a biesl called Immervoll on Weiburggasse. It was small, busy, and seemed to be filled with Viennese, not tourists. The food (including the schnitzel) was excellent. If you are looking for something fancy, I'm sure others who have spent more time in Vienna will have suggestions.

We found nearly every restaurant in Vienna has schnitzel on its menu. I particularly like it, so ordered it at a few places. It's not hard to find very nice little restaurants in Vienna, if you walk down any of the cute side streets off main touristy streets, read menus, follow your nose, and observe their customers. We found one especially memorable, perfect little restaurant just that way. I am sorry to say I've lost its name. We sat at an open window, over the little cobblestoned street, and felt pampered by the service and wonderful fresh fish dinner. Restaurants are not hard to find in lovely Vienna. Have fun!

Has more than excellant schnitzel at a ristorante in the HOTEL EUROPA beleive
its name was the ZUM DONNERBRUNNER, it was quite a few years ago. It was on
the second floor of the hotel above the

As someone mentioned, Wiener Schnitzel is available in almost every restaurant.
Figlmüller's Schnizels are quite famous and they are really huge. They are quite touristy too.
There is popular place called Salm Bräu behind the Belvedere. It can be touristy, but it quite popular among the locals in the evenings.
Last night we went to quite a nice place with some guests at our insitute: Weibels Wirthaus (Kumpfgasse 2; on a street behind St. Stephen's Cathedral). It is quite small and reservations are almost necessary... every table seemed to be reserved last night. Both food and service are quite good.
There is a lively restaurant that is very popular among among the locals, almost opposite my flat: Bier Teufl. It is in the 3rd District near the Wien-Mitte station, on the crossing of Beatrixgasse and Ungargasse.
Amerlingbeisl (Stiftgasse 8) and Plutzer Bräu (Schrankgasse 2)are two very popular places among the Viennese in the Spittelberg area. This area has a lot of nice restaurants. Amerlingbeisl is a personal favourite-- in summer, or when the weather is nice, you can sit outside in the courtyard... but of course it can get really crowded and noisy.

Wiener schnitzel is fine, but really, there is so much more to Viennese (and Austrian) cuisine than that one overhyped dish.
What's your price range? Be advised that some of the less expensive and less touristy restaurants may not take credit cards, esp. American Express.

Try Boheme, at Spittelberggasse 19, A-1070 Wien, www.boheme.at. We ate there on our last night in Vienna in March, and it was wonderful. The restaurant was cozy and beautiful -- reminded me of Frodo's house in the Lord of the Rings movie. The food was excellent and offered schnitzel, as well as many other Viennese foods. They also have a wonderful wine list.

When you say "nice" with "good ambiance", I'm interpreting it as being a little on the upscale side. Two really charming restaurants are Griechenbeisl at Fleischmarkt 11 and Zum Weissen Rauchfangkehrer (the White Chimney Sweep)at Weihburggasse 4. Both are centrally located and very very good. The second is a bit dressier.
