Sevilla - relax and truly enjoy the full heritage of Spain.
IMHO Madird can be seen in one day and has no more charm (and closely resembles) Chicago (not that I dislike Chicago - but wouldn't want to go to Spain to see it).

Madrid has everything you listed and more. Stay, if possible, in the area between the Prado and the Plaza Mayor. (I'd recommend my favorite hotel, but its character has been completely changed during a recent renovation.)
If you want to get out of the city, the day trip possibilities to fascinating places with interesting architecture and/or wonderful food is long: El Escorial, Avila, Toledo, Segovia, Salamanca are all within an hour's train ride.

Spain is so rich in fantastic places , I believe no one can really choose a city for somelse,all places mentioned would do the trick, I would go to Madrid for a night or two and then go to Salamanca for instance. Or go to Barcelona for the five days, or go to Seville too.
