Most of the restaurants have a set menu for NYE. If you're not arriving in Venice until a few days prior and want to dine out I suggest you ask your hotel to book you in somewhere. The main centre for celebrations is in the Piazza where the crowds let off crackers and fireworks. At midnight there's a fireworks display. You should be aware that they shut down the vaporettos early (I think around 8pm or so) on NYE and they don't start up again until late morning on new year day.

However, there are many newer threads than those you offered. Several of them feature comments by me. I don't think any Fodorite has spent as many NYE's in Venice as me, so forgive me for flaunting some authority. Diz01 is welcome to make a pot of coffee and read through all my posts to find the info he/she seeks. Considering network television's new fall line-up, my posts should prove a more winning form of info-tainment.
