I liked the hotel Jedermann as well. Again, not in the city center, but it couldn't be easier to get there...tram stops right outside the door and the staff is very helpful. The breakfast is a great value and quite good. (I think I am just echoing Cricket's comments here...but it really is a great value place. Free Internet access too!)
I paid 45 euro for a single room with a shared bath. I believe the double rooms with bath are around double the price.

We really enjoyed the Hotel Admiral, in a nice area southeast of the city center and an easy walk from there. I'm sorry but I can't recall the rate. It was probably in what would be called a "moderate" range. Good luck.

We stayed at the Hotel Europaischer across from the train station. Very handy for day trips and meeting for tours. Use their web site to get the best deal on the room. Includes a great breakfast and internet access. 5 minute walk to Karlsplatz, and about 15 to Marienplatz

We have stayed at the Europaischerhof mentioned earlier and the Hotel Uhland. We like both of them. Although the Europaischerhof's location is great, the Uhland is very close to a bus stop on a route that goes to the main train station. Sometimes you can get a really good price for the Europaischerhof at www.hrs.de. You might consider checking bensbauernhof.com for other suggestions.
