Malaga Hotel Question
I am flying into Malaga at 11 PM on a Saturday night in August. I was about to book a hotel but I noticed that the latest check-in is 12 PM. If anyone has a recommendation for a hotel with 24 hour reception that would be appreciated. I am interested in going to the beach on Sunday.

I've encountered budget hotels that don't have 24/7 reception desks and ones that are not open in the middle of the night, especially small family-run ones. These might usually be called pensions in some countries.
However, I suspect that the OP misinterpreted the hotel info, and the checkin time was simply when it can start, not the latest possible (12 pm is, after all, noon, so that would not be possible for the latest possible checkin, but the earliest it definitely is).
