Heading to Italy 10-21. To 11/5
Flying into Venice out of Rome
Staying in Venice. Rome and Florence
Prob 3 nights each with hopefully a trip to Amalfi for 2 nights
Looking for hotels to stay in

I suggest using www.booking.com . You can choose your neighborhood, or just indicate your destination as "city centre XXXX". Sort the list by price or guest rating, and read the reviews.

300 anything per night is very low for 7 people in a hotel- since you will need one quad room and one triple room.
Other options are:
Staying in hostels (perhaps pay for 2 4 bed rooms or one 8 bed room)
Or, you might try to find an apartment that will hold 7 people, giving you some more space if you can find places that will rent for only a few nights.

Do you mean seven single rooms? That won't be easy. In many hotels, you'll have to get some doubles at single occupancy rates, which are almost as expensive as a double for two people.
Anyway, on www.booking.com you can specify that you want seven rooms for seven adults.

So then is it 300 per room for 7 rooms? If not, then each room is only 42 - which is not rally a price for a private room with bath.
Took a quick run through bookings.com and when you ask for 7 rooms for 7 people they either reco a triple and a quad or 7 beds in a dorm room in a hostel. Don't imagine many hotels have 7 singles - or are willing to put one single each in 7 double rooms.

Definitely, you'll want to look into apartments. Those will be your most economical. We were 2 adults and 3 kids. We used airbnb for Rome ($500 total for 4 nights, including all taxes and fees), stayed in Pompei (200EU total for 4 nights) in an apartment through homeaway.com . Pompei was a good jumping off point for us, since we wanted to check out the excavations. From Pompei, we took day trips to Sorrento and Amalfi Coast. Amalfi Coast is very coastal scenic. We hiked along the Amalfi Coast on Footpath of the Gods and arrived at the beach at Positano. Let me know if you'd like more information on that.
