Hotel in Rome & Florence Italy
We are looking for a hotel or B&B in Rome (centrally located)for 4 nights. We are willing to pay 200-300 Euros a night. The key is safe, clean and quiet as we have been reading alot about "paper thin walls" as well as "street noise".
The same is true for 3 nights in Florence.

Some of the double rooms at the Senato in Rome are over your budget range, so if the Senato is your choice you should book well in advance.
The Due Torri in Rome has a sister hotel nearby, the Fontanella Borghese, where we have stayed several times. No terrace like at the Due Torri, but I like the location very slightly more. On one visit we experienced street noise until about 11 pm from walking tours going down the tiny street behind the hotel and voices echoing off the buildings. If you request a room facing the interior courtyard of the building, you'll eliminate that possibility.

We've stayed at the Tourist House Ghiberti in Florence which is recommended often. Not a hotel in the traditional sense (no lobby per se or room service, etc.) but very comfortable, clean and quiet. Only 5 rooms, so this is another one that needs to be booked early.

I'm a huge fan of the Tourist House Ghiberti, especially at the price, but you should know it is across from emergency entrance to a hospital. The B&B has double glazed windows, but some siren noise can bleed in.
Given you generous budget, you can probably find a good hotel in Firenze with double-glazed windows in a pedestrianized zone.
And do pack ear plugs if you are light sleepers.

We stayed at hotel accademia in Florence; it was quiet, nice sized rooms, good breakfast and less than 5 minutes from the train station in one direction and 5 minutes from the duomo, 10 to David, 10 to medici and 10 to ponte vecchio in the other....perfect for us. No onsite restaurant and no lift so it will show as either a 2* or 3* I think. We'd stay there again - didn't use the little courtyard but it looked quite nice.

Rome--I preferred Due Torre to the fontana borghese but both are excellent.
Florence-REsidenza Il Villini an excellent buy and well within your budget. Friendly hosts, quiet streets, good beds, tasteful immaculate rooms, free Internet, very central.

I managed to snag a great rate at the Sofitel in Rome last October and loved the hotel and the location. Having stayed twice before at the Senato (their rates are just not justified these days IMO) and also at a half dozen other hotels in Rome, it was the best overall experience yeet and in a wonderful location. Peaceful street, quiet area yet so convenient. And there is a lovely rooftop terrace that we enjoyed every evening of our stay.
My second choice in Rome is the Hotel Capo D'Africa. Also quiet, great location, large modern rooms.
For Florence, I like being a bit out of the center. San Gallo Palace is a very good value, modern, quiet residential neighborhood. This year we are staying for a week at the Athenauem which I wandered into last visit and just loved.

I have to agree with most of the Fodorites....Albergo Senato in Roma. It is a great hotel, great location and the staff is wonderful. It is worth the money.
I am going to Florence in November and I am staying at Hotel Davanzati because of all the recommendations.
