I don't know of any tours or guides from Bern to Gstaad or Gruyeres. Here's a link to the Bern site, with tours & excursions:

They don't include these two.
But no worries -- it's incredibly easy to do each on your own. Just take the train from Bern (schedules at www.rail.ch), then stroll around each town. You can stop at the tourist information office in each town to get a walking tour or highlights of the area.
If you find yourself in Montreux, there is a tour to Gruyeres called the Chocolate Train, but it only runs June-Oct.

This won't help for January, but we did the chocolate train from Gstaad instead of Montreux. Actually it meets up along the way to Gruyeres.
We tried for ages to get to Gruyeres by train and/or bus and it was always a major problem from wherever we were in Switzerland. But Gstaad is easy.
