I like Albergo delle Drapperie: www.albergodrapperie.com. I stayed there for 2 nights last year and will be staying there for 1 night in March. It's right in the center of town, really close to the main sights, so it's great for a 1-night stay. It gets good reviews on Tripadvisor, too. Hope this helps!

Stayed at Albergo Drapperie also for 2 night about 2 weeks ago. Perfectly situated on a pedestrian walkway that is spilling over with outdoor fruit, veg, flower and seafood markets. You are a couple of doors down from Tamburini and next door is Gilberto's another incredible place with wine, spirits, chocolates and other farred goodies.
The breakfast can be skipped and you'll save money. You'll be able to find better, fresher pastries and coffee elsewhere.
The ONLY issue I had with the hotel is our room 401 smelled of sewer gas, and we even had to keep the bathroom window open. We did not complain so I don't know if they would have gladly given us another room.

We had a very pleasant three-night stay at Internazionale Hotel (Via Del Indipendenza 60)last April.
Our room was very nice and clean, and the marable bathroom appeared to be new.
The brakfast was good, and so was the location. We walked everywhere.

It's a Bed and Breakfast, not a regular hotel, but it's WONDERFUL, you get to feel like a member of the family.
