Resort/hotel suggestions for December for a family
Hi, I am looking for an all inclusive resort on the beach for a family of four. We like to relax by a pool and enjoy the beach. BUT we are not the type of family that likes a Disney resort, Hard Rock etc.,. We like something more low key but nice.

We need more info from you to make meaningful suggestions:
How long a trip are you planning?
When in December are you planning to travel? If Christmas week you could run into minimum stay requirements.
Where are you flying from?
How old are your children?
What type of budget do you have for airfare? Give actual dollar figure.
How long a flight are you willing to endure?
Are you willing to take one or more connecting flights and or ferries after departing from your nearest international gateway airport to reach your final destination?
What budget do you have for accommodations? Again, give dollar range not some nebulous term like “affordable” or “won’t break the bank”.

Just returned from Beaches TCI. Downside - expensive. Upside - fabulous beach, multiple pools and restaurants. Plenty to do but very quiet. Relatively easy air arrangements from much of eastern US. Non-stop flights from FLL, MIA, ATL, CLT - plus several other cities on weekends. On real planes, not Caribbean puddle jumpers.

You might want to check this out... The Hilton La Romana has amazing rates for an all-inclusive beach resort. Rooms for two guests are currently $204, less if you pay in advance, and depending on your dates, of course.

Look at the Buccaneer Resort on St Croix. Not truly an all-inclusive, but it does include a fabulous breakfast buffet. Our family of 5 adults loved it.

That's a good choice!
If you are driving around the island, be sure to go to Off the Wall for lunch one day (or many). We would eat there every day we loved it so much. Ended up feeling like locals. I lot of locals and work/ delivery folks stop their daily for lunch. We were there YEARS ago when Jake's parents had just moved down from VT (or NH?) and another couple on the plane had moved there full time after a previous vacation. It's the only place where an entire restaurant waved "bye" to us as we left the next day. Our very own tropical "Cheers".

I love St. Croix. After St. Lucia, it's my favorite island.
If you don't know about Buck Island you need to know - and take a catamarran tour out there. We went with Captain Heinz, but again this was years ago. A US national monument. Magical.

One of my favorite snorkeling trips ever!
If you go into town, look for the famous St. Croix hook bracelets for sale. But find out which days are cruise ship days and don't go into town on those days.
One last favorite - a horseback riding trip above Cane Bay. At the end of the ride, they will let you (if you want) ride the horse into the ocean. It was one of my very favorite things ever. That moment that the horse walks off the ocean floor and starts swimming with long strokes. I think they enjoy swimming as much as labrador retrievers. It was just fabulous. I think you'll love the Buccaneer. Be sure to contact them directly, for the best service.
We had booked rooms in the big house, but were upgraded when we arrived, to oceanfront rooms. Maybe you'll be lucky, too.
The breakfast buffet there is the best, with a gorgeous, sweeping view to the water.
Have fun!
P.S. We rented a car for the day, with easy pick-up and drop-off right at the Buccaneer. I recommend doing that for one day, so you can drive around the island. The 'beer drinking pigs' are fun, and we liked Rainbow Beach. We had a snack at Rhythms, https://www.rainbowbeachstx.com/
