Spa: Spa Mystique in Century City (adjacent to BH), Aida Thibiant in BH, Elizabeth Arden in BH.
Shopping: Montana Avenue in Santa Monica has more little boutiques than chain stores (at least for now). Avoid the malls where it's the same stuff you have at home. Except for the Beverly Center where I have seen many, many celebs (sometimes others had to id them for me, but I don't watch much MTV anymore). Starspotting is a tough sport, keep your eyes open and just have fun. Other nice activities are: Museum of TV and Radio in BH, Barneys Department store, (and adjacent Saks and Niemen's), cool shops on north Robertson Blvd (near Beverly Blvd) like Kitson.

Melrose Avenue -- good people watching, interesting shops, and possible star sightings.
Venice Boardwalk -- good people watching.
Rodeo Drive -- good people watching (may see some stars).
Burke Williams in Santa Monica -- nice spa location.
