Driving through southern Germany, would you book accomodation in advance?

Following on from a different topic I have... We are driving through small towns along Mosel Rhine route and RR towns and would like to 'take it as it comes' and wondering if we need to book the accommodation in advance. Is it likely we will find B&B's pensiones, hotels etc along the way? We have 8 days and will start in Cologne and end in Munich (yes, different for those who saw my last topic, the more research, the more changes). I'm thinking we might start driving and decide to take another route depending on what we see, we might like to stay longer in one area.... Dates from 28th August through to 5th September. Thanks
