We stayed at the hilton tokyo bay last year in november. It was perfect for us, we walked to the monorail. Then took the bus to the airport from the hotel. The price was really good also. Disney was awesome!. We were the only non asian people there the first day and when we took our pictures with mickey and friends, people started taking their pictures with us as well

I haven't stayed in any of these ryokans listed below but I have used the Japan Guest Houses with success. The places they list are nice and up to date.

Hope this gives you at least a start.

For a resonably-priced family accommodation near Disney, it's hard to beat the pair of hotels Palm & Fountain Terrace Hotels. Most rooms sleep 4 - King-size double and twins and a low-season price starts from 16,800 yen a room. They are accessible to/from the park by Disney Resort Partner Hotel Shuttle.
