With an eye-popping exterior design (its jagged collection of slit-shaped windows on an all-white 13-story building is meant to evoke the Colorado state tree, the aspen), this boutique hotel goes all in on the environment: everything about its thoughtfully curated design is nature-focused, from the natural textiles to the forest sounds on the elevator speakers, while its biggest flex is that it aims to be the first carbon-positive hotel in the country. Public spaces are meant to mirror a forest floor, with the lobby and second-floor gathering spaces composed of varying wood shades and earthy art installations like a draped mycelium fabric above the first-floor bar. Upon exiting the elevator to the guest floors, visitors meet a darkened hallway meant to mimic the inner workings of a tree canopy, but the guest rooms themselves are all light thanks to the aforementioned geometric windows. Much of the furniture is upcycled and/or locally sourced, and the rooms are decked out in calming muted tones and pressed local wildflower art prints; beds are comfortable, toiletries are luxe, and about a third of the rooms have built in hammock-like benches to enjoy the windows and views. The ground-floor restaurant and bar, Pasque, serves elevated American cuisine with strong Colorado flavors for all three meals and the lobby coffee bar, Little Owl, offers pastries and locally roasted coffee. The culinary highlight is the rooftop bar and restaurant, Stellar Jay, which offers a similar menu to Pasque but with a wood-fired twist, along with creative cocktails and unbeatable views of the State Capital and surrounding neighborhood. All of this would be impressive on its own, but Populus takes it a step further with its focus on sustainability. Abstract but approachable large-format paintings hang in each room, balancing the iron-and-wood furniture, much of which is built by the hotel group's in-house craftsmen. Rooms are contemporary and stylish, with polished concrete floors, light wood furnishings and sleeping spaces that are minimal in style and palette, while accent walls and bathrooms pop in one primary color pulled from the facade. There are family-friendly options with bunks, studios that are more podlike, as well as king, double, and ADA-compliant rooms with roll-in rain showers. Suites includes a pullout sofa and expansive views of the Manhattan skyline. Despite its busy location just off 181st Street and overlooking the Harlem River Drive, the Radio is quiet and calm, well, in guest rooms, at least; the on-site restaurant, Jalao, an outpost of a popular restaurant of the same name in Santo Domingo, in the Dominican Republic, offers classic and authentic Dominican food that is a huge hit with locals (the neighboring community is known as \"Little DR\"), which makes it a lively vibe that you will want to join. The Rainbow Ranch Lodge's original 1919 main building has been painstakingly restored to its original glory after a 2008 fire. Guests stay in two separate room sections, and special events are held in the barn. The log-accented rooms perch alongside the Gallatin River, where guests can fish from the riverbank or in the rainbow trout–stocked pond (catch and release). An outdoor fireplace stands beside the infinity hot tub. Animal and fishing motifs decorate the spacious guest rooms, which have wood-burning fireplaces (most), filtered water, lodgepole-pine beds, and down comforters. The exceptional restaurant ($$$$), decorated with Western paintings, has one of the state's largest collections of wines; 8,500 bottles are displayed in the Bacchus Room, where groups of up to 10 can dine. Fresh fish is flown in daily. Among the game dishes are elk ragout and a 20-oz. boneless bison rib eye with tarragon salsa verde.
