My beloved Sashimi de Ventresca (Ventresca is the prized belly of the tuna).  This is a half ration, served with soy, wasabi, pickled ginger and an excellent hijiki salad.  This is a favorite starter of mine in this Tuna Paradise.   A whole portion can be a great lunch, and later that week, I took some home from another restaurant to lunch in my room.  Many of the good restaurants near here have a separate section on their menus featuring dishes made with "atun rojo de la almadraba."

Coquinas al Jerez, tiny clams from Huelva, sautéed in a sherry sauce..  Surprisingly, I found the sauce a bit too salty and the clams so tiny they were difficult to eat except with the hands.  One of about 5 types of clams on offer that afternoon!

How didi this one sneak in....it's from today....mercado de Barbate.....those 2 containers of manteca colora---they are no longer on display with the home-made croquettes--they are tucked away in my suitcase, enclosed in some Zip-Locs to prevent yet another disaster (don't even ask!!)

This was the delicious starter offered to all diners: a pate of mixed fish and seafood.  Light and delicious..I could have a double portion with a salad to complete an excellent lunch!  But there was more to come!

This is an assortment of raw and mostly raw tuna cuts:  From left:  Tuna tartar; tuna tatami (cooked on the outer edges); Sashimi de ventresca; parpetana, which was described to me as the palate, or the part of the tuna behind the throat....in any case it is delicious.  This is always cut much thinner than the belly (ventresca)
