I think I counted eight tables in the soaring dining room; most diners were speaking Spanish but waiters all spoke at least some English and some were fluent....this was the view from my table.  The restaurant has an open kitchen, not shown here.

All I know is that the yolk was unlike any I'd had before), topped withSpanish caviar (was it RioFrio?  It was exceptional and made me want to buy some before I leave for home); see MORISCO menu for more precise details on this stellar dish

Those incredible, sweet, crunchy and altogether unforgettable tear peas, and a "macerated," and oh, so delicious oyster along with pressed sheep curd (the three white cookie-like things), atop a "gelee" of spinach that was like a cold soup but richer....and BETTER!!!

Set upon a bed of very thickly sliced, braised endive strips, a trio of raw gambas draped with gossamer slices of Joselito ham that was, in turn, crowned by two lavishly sized spoonfuls of black caviar, which I am again assuming comes from the RioFrio Farms near Granada.    A regal and inventive dish,  this filled my mouth with an explosion of exquisite flavors such as I've never before encountered.....on this dish. alone, Paco Morales will be enshrined with the culinary greats of the ages!!!

Those Patatas Alinadas with Pulpo, again, with turmeric-stained bread (fantastic breads here!!) in the background.  Sop up that dressing with the chunks of the crusty bread!!!  Heaven.  You could almost stop right there!!!

Tortilla de Camarones, signature dish of the Costa de la Luz and, especially Cadiz, where they are known as TORTILLITAS DE CAMARONES GADITANAS.  This beauty tied with the Tortillas at El Faro Bar in Cadiz but I've not tried them in Sanlucar YET!!  They are made with tiny shrimp and, usually, a mix of what and garbanzo flour........  One of the best snacks in Southern Spain and  ESSENTIAL for anyone visiting this coast.
