Canyon would be fine for BOTH Lamar and Hayden Valley's. The Yellowstone area has tons of animals. We seemed to have best luck for bears around Tower area. The elk are usually around Mammoth area. Bison are everywhere. You are more likely to see wolves in Lamar or Hayden, but those you need a bit of luck. Bears(from what I know anyway), are probably more plentiful in early months like June. In August, I think they go to higher elevations in search for food. Moose, are perhaps a bit easier to see in GTNP. It's all a crapshoot. Be out at dusk and dawn for better luck. You will certainly see a lot though.

If you do the Chuckwagon Dinner from Roosevelt You have your choice of riding the chuckwagon or horseback. We did the chuckwagon but the horseback looked like maybe it was more fun! They took a different trail than the wagons.

When we have family vacationing with us, we stay in the Teton Village area at condos. I haven't tried the condos in Jackson, but I think there are plenty of newish ones near Storm King sky area. Just like the food in Jackson Hole, you can find condos of all levels of luxury. I find the rental websites to be pretty good with good pictures.
