Where to dine in Maui and Kauai?

My two favorite restaurants on Kaua'i are Blossoming Lotus and Cafe Coco.
Blossoming Lotus is 100% vegetarian and has lots of creative and interesting foods.
Cafe Coco has the most interesting atmosphere with live music every time I've been there for dinner. You sit outside in the back of the restaurant. Menu isn't strictly vegetarian and the desserts are great.
If you want poke, great smoked marlin or even just a plate lunch then Fish Express is great.
Lastly if you are in Koloa, you ought to avoid Pizetta unless you enjoy slow service and bad food.
