You have a lot of options, but check out the Flamingo Hilton. They have a magnificent pool and your child will enjoy the animal exhibits on the hotel grounds.
Here's a link with a pic of one of their 3 pools:

This is hotel is only one of many places your family can enjoy, but it's one of my personal faves.

The 6 year old will love the pool at the Flamingo, and the old parents will appreciate that you don't have to walk through a 3-mile casino everytime you enter the hotel just to get to the room elevators.
Great location too, and usually some of the best prices on the strip.
May can be tricky due to conventions. I'd book as soon as you see a decent price under the "special offers" section on flamingolv.com ...you can always cancel if you find a better deal somewhere.

Love MGM, have stayed there with 70+ year olds, but never with kids. I did see many families there. Huge hotel, you will do a lot of walking just to get to your room. If you do stay there, ask for rooms close to elevator.

If you booked directly with the hotel, don't forget to keep a look out for specials. If you see a better deal, you should be able to call the hotel and get it at the lower price.
It will probably be a little while before hotels start announcing the deals for May, I haven't spotted anything past April yet. Check http://www.vegashotelspecial.com for the latest deals.

The busy times are usually when the big conventions are in town. You can get a list of conventions in march at: http://www.pcap.com/lvconv.htm#Mar07
Watch out for:
Mar 06-Mar 07 - Nightclub & Bar Convention & Trade Show - Las Vegas Convention Center - 38,000
