Interesting question...
Have feeling this is only time you can make trip..
However, most routes Nev., OR etc will involve snow/ice on roads...especially "off beaten track".
If you have four wheel drive car & "snow" tires ...less daunting.
Oregon coast is beautiful even in winter and although lots rain, not usually snow..
There are "other' off beaten track ideas in cities..
.Seattle..Small "private' Art Museum.." The Frye"
or large Seattle Art Musum..SAM.. near Pikes Market
Would help if you would clarify your interest and dislikes..
One of my favorite places in Portland Or.
Powell's bookstore.."largest bookstore in the galaxy" (their description)
