I liked Paul's. It's a small place, so make reservations. Great food - expensive.
For someplace a little cheaper, check out the Cowgirl's Hall of Fame. A little off the beaten path and not haute cuisine (they have burritos and chili burgers), but a fun, fun place.
For breakfast, I really like the Tesuque Market, which is just north of Sante Fe.
Also, if you go through Madrid (south of Santa Fe) eat at the Lost Mine Tavern.
Sort of a dump, but another fun place.

There used to be a wonderful restaurant on Canyon (I think!)called Geronimo's. Great food, beautiful restaurant. We also loved Anasazi Restaurant. Plaza Cafe is great for breakfast, right on the plaza. Wonderful cranberry jam... have fun, we're jealous!

A friend of mine would second the recomendation for Geronimos. In Taos, my favorite was called The Old Blinking Light, in between town and the ski resort. Excellent food and service. Then there was a good Mexican restaurant, small, family-owned, on the left side of the road on the way out of town towards ski area. I can't remember the name, but I think it was painted pink.
