I don't know of any rental car companies that rent conversion vans.
It sounds more like you need a 15 passenger van and most places carry those. While it say 15 people that means 15 very uncomfortably. If you get a 15 passy you can take the last seat out: everyone will be comfortable and room for your camping gear.
However if it's for this weekend you're probably out of luck. Vans in the summer can be tough to get with a res a few weeks in advance.

What AAFrequentFlyer was pointing out is that you asked WHERE to rent such a vehicle-- not WHAT VENDOR to use. We can't tell where you were going to pick it up.
I've rented vans from Enterprise quite often. A 15-passenger van with a row or two taken out will give you the room you need-- barely. Have you thought about maybe 2 SUVs? Might be a bit easier to handle on the road (though most SUVs are actually pretty awful off-road).
