Hello Cerlaurie, if you have to be in SF at 8:00pm on the day that you are going to visit Napa Vallejo here is my thought. I would be leaving Napa Valley at about 6:30pm or so. I do agree with going down I-80 and over the SF Bay Bridge.
But if you have absolutely have an appointment in SF at 8:00pm there is no way I would personally only allow an hour to get to your appointment. And of course do not know where you have to be in SF but to take into consideration the time it will take you once you get to SF to get to your appointment.
So IMHO there is no way I would make a dinner reservation any later then 5:00pm. And I would let the restaurant know that you have this appointment and need to leave by such and such a time.
I have had to many "close calls" these past years on getting into SF to count on the minimum time. It can be heartracing to put it mildly.
So have a wonderful trip. And enjoy the beautiful Napa Valley.
