Second what Valleyisle said: Just ask around wherever you are staying. Walk along the beachwalk at Kaanapali - and there is a beach type place - with decent food and music, etc.
Same with strolling along Lahaina or Kiehe.

Paia Fish Market in Paia, Eskimo Candy in Kihei (both best for lunch), Hula Grill in Kaanapali (good lunch or dinner). More on the gourmet side, but still local flavor, Hailemaile General Store...between Kahului and Kula. The Gazebo at Napili Shores for breakfast or lunch. Monkeypod Kitchen in Wailea for lunch or dinner.

It's been a while since we were in Maui, but my best tip for travelers is to ask the local people where they like to eat. It is not a good idea to ask for a "good restaurant", as you will usually be directed to the high priced tourist spots. That said, I loved Mama's Fishhouse at lunch and Paia Fish Market. If you have access to a kitchen, grill or any inclination to cook on your own, (and there are grills in some of the parks) there are wonderful fresh catch fish markets and local produce available on Maui. It's a lot of fun to cook your own seafood and make your own fresh fruit salsas!

Alot depends on which locals you ask and how you ask it.
Some great tips from Voyager 61 - and here is the Hula Grill webpage - and we also liked the Dukes in Kauai and Hono - but haven't had the pleasure of trying one in Maui - assuming one is there. Kimo's as I recall was also fun/lively, but as noted - these are a bit more upscale than the local neighborhood place. Another fun thing to do is go have pupus - H'or D'ouerves - and drinks before the dinner hour - which can last you through the evening.

Flatbread Company in Paia is awesome for a fairly inexpensive meal. The pizza is the best I've ever had and the salads are yummy too. Merrimen's in Kapalua is excellent for fine dining and you can't beat the view. Sit outside if you can.

Back from Maui and we loved the Aloha Grill although the night we arrived it was very windy and rainy. We ate outside with rain dripping down on us and we still loved it. Wanted to go back but it did not work out.
I think the best meal we had was at Kimo's in Lahaina- beautiful ocean front spot with a nice happy hour.
We did not have dinner at Merrimans in the Napilli Kai resort but we did go for happy hour- also a beautiful spot with outside dining and a great place for whale watching. It's kind of spendy but we did happy hour and drinks and it was great.
The worst place we ate was Bubba Gumps in Lahaina- long lines, took forever to get our meal- people were leaving without eating because of the poor service. Don't know if this was just a bad night for them or customary.
Got good recommendations about Betty's in Lahaina but did not make it there either- but apparently you can watch the entertainment at the luau next door if you have dinner there- another place that was on our list but we ran out of time.

You have to go to Mama's fishouse. It is great local fish in a setting that feels very Hawaiian (including tiki torches). It is on a beautiful little cove and it is not inexpensive but WORTH it. We go every trip!

No Mamas Fish House for us- not on our budget. Have heard great things about the food - and the cost of it though. One lady we met said she had the best meal of her life there.
Instead we got a box lunch at a grocery store in Paia and headed up the mountain. The grocery store lunch was great- had fresh mahi mahi with a soy ginger sauce and it was very good.
