On Maui:
Sansei for Japanese (Zagat's top-rated in the state a few years ago).
Roy's for Pacific Rim in a fun setting.
Chez Paul for classic French.
I'O on the beach in Lahaina for outstanding (mainly seafood) food and incredibly romantic setting. www.iomaui.com

Kauai

Another vote for Kalaheo Steak House
Tidepools at the Hyatt
Casa di Amici in Poipu for Italian
Duke's at the Marriott in Lihue for either dinner upstairs with the great salad bar, or the Barefoot Bar downstairs for lunch or casual dinner

We thought the fish at Duke's was really good, and their salad bar was huge and amazing.

Lilikoi pie at Hamura's. Yum!

I second Med Gourmet in Haena. My wife and I had a terrific lunch there on our last trip. The setting is wonderful and the food is a bit different from anything else on the island.
