Lowkey, waterfront, natural area for winter months--no high rises

We have visited coastal Georgia and South Carolina in the past and really liked it. But, we have never gone in the dead of winter. Of course, as far as weather anything will be better than where we live, so it definitely is worth checking out.
We have been in Rockport, Texas, for the past two weeks. It has much of what we are looking for--no interesting mangrove areas or river estuaries though. Rental prices are very reasonable compared to many places in Florida. I can tell that it is very popular too with others who want to get away from northern winters. I stopped in one of the town's most popular rental agencies yesterday and was told that they have no winter condo rental left (Jan. through March) for the upcoming winter. We are typically more last minute planners, so this was a huge shock to me since for what is our typical style I am planning way out ahead of time.
