Just about all of the hotels have Superbowl parties. I went to the Rio's last year and will be going to Caesar's party this year. These are usually for invited guests and I'm not sure if you can actually purchase a ticket to attend one. The one at the Rio last year was in a very large ballroom - big round tables, huge screens all around, a buffet that was available throughout the game, open bar and some gifts (a Superbowl shirt and cap). I had a great time.

I would call some of the hotels that you're interested in staying at and ask them if they have parties available for the general public.

Most all casinos sports book will be showing the game. However, probably not providing any type of organized party though. Check out this link for more info:

Every major hotel should have something going on. We did Harrahs SB party a few years back and had a great time.

Last year the NFL made a big stink about the Las Vegas hotels charging for their Superbowl parties and many were cancelled and won't be held any longer. Something about the copyright laws that said the hotels were not allowed to charge admission unless they were paying a fee to the NFL. I'd check - and double check - with any hotel you might be planning to party at for the Superbowl. I know many venues that in the past have hosted these aren't any longer.
