Las Vegas Restaurant and Show recommendations

We are going to be in Vegas the end of July to celebrate our friends birthday. We are two couples in our mid-30's and staying at Encore (great rates right now!!) We are kid-free and looking forward to some fun nights out on the town.

We would love to go somewhere really nice one night for dinner. What are some suggestions for a really great place? We all are across the board on our tastes, so anything from steaks to seafood would be great.

Also, what are some recommendations on places for cocktails? Maybe some places with killer views? And any suggestions on a fun place for late-night dancing?

We have heard Jersey Boys is a must see. We were also thinking about a burlesque show one night. Anyone been to forty deuce?

My wife and I love Emril's Delmonico in the Venetian and Bobby Flay's Mesa Grill in Cesears and with Joe's Stone Crab in the same place (go for lunch avoid the crowds and lower prices). Off the stip, Tillerman's is great for seafood.
Last shw we went to was The Blue Man Group and it was excellent.
I've read there is a great bar/club at the top of The Hotel at Mandalay Bay, but otherwise can't help with the view/dancing

The strip is exciting for a few hours but I find it to be really offensive in the evening after it becomes littered with pornographic flyers for hookers.

We have actually eaten at Bobby Flay's in NY and loved it! Didn't know he had one on Vegas, we'll have to try it out one night.

I have heard the VooDoo lounge has an awesome view of the strip. We'll definitely check it out one night.

Any suggestions on a really good steak?

Bette Midler -- highly recommended show. Saw it about 6 months ago and it blew me away.
