If you're looking for a true beach vacation, you'll probably be disappointed in the keys, as all the beaches are man-made and most are very small.
Of the hotels in Key West, the only one with a decent sized beach is the Casa Marina, but in my opinion its location isn't very desirable and it frequently has lots of small children.
Aside from it, many of the hotels only have postage-stamp beaches and some have none at all. My two favorite hotels on the Gulf are the Hyatt and the Ocean Key Resort, both on Front Street. The Hyatt has a tiny beach and I prefer its pool to the one at the Ocean Key, though the Ocean Key has some really nice suites overlooking the water. The location of both is great...within close walking distance of tourist activities, sunset celebrations and restaurants. I don't think the food at either is particularly good, though.
Of Key West hotels without a water view, the Marquesa gets the best reviews, followed by the Heron House and the Gardens. There are also lots of popular B&Bs in Key West.
