Leslie, by now you are in Kansas smooching with your sweetie! Have fun!! Come back and tell us all about the wild, wonderful things in Kansas (and the best steakhouses) and have a FABOO time in Colorado as well!!

I crossed part of Kansas on a bicycle tour a number of years ago. Cottonwood Falls would be a big must-see if I ever did the trip again.
There was some sort of "Dorothy" or "Wizard" attraction in Liberal which I poked my nose into in the evening while they were closed .. seemed kinda "hokey". Dodge City has interesting museum/town ... see the saloon act ... Dalton Gang Hideout. Kingsley claims to be the 1/2 way point S.F. to NYC, and has a nice local museum, I think in a sod-house. In fact, lots of nice local museums in Kansas, with guides very proud of their local history.
I don't know if they are still there, but Abilene also had a small attempt of a western-town version of Colonial Williamsburg, and a telephone museum. Also a greyhound museum (canine, not the bus), but I didn't bother with that.
Topeka's history museum I enjoyed, and if you find yourself just west of Topeka, see if the "Dover Merchantile" in the town of Dover still serves those DELICIOUS home-made pies. They were baking as fast as they could but couldn't keep up with our group of cyclists. Lot's of places serve buffalo too - try it!
