Pre-welcome to Houston! You will be very close to the Pin Oak Charity Horse Show (Katy) if that interests you. It is free, except on Saturday nights ($10 and free for the 10-year-old). It's pretty wonderful.
It will be warm here. We've had a mild winter. Sandals will be fine! Tevas or Birks, or comparables.
The Museum of Natural Science will also be a great thing to do (think someone already mentioned that).
You can see doplhins by simply riding across the (free) Bolivar Ferry out Galveston way. Just rida across, then ride back. The beach is not the greatest, but it's not so bad. It's just the gulf--you're not going to see any white sand around here!
