Flights to Oahu are normally cheaper than the other islands. Some of the inexpensive hotels in and around Waikiki Beach are the Honolulu Prince Aston, Marc Suites-Waikiki, The New Otani and Outrigger Luana Waikiki.

Unless you can find a good deal somewhere, Oahu is the cheapest to fly to and the cheapest for hotels.
Waikiki is a strip about 1 1/2 miles long and three blocks wide. So you are close to the beach regardless where you stay. The hotlels right on the beach are fairly expensive.
Shopping is the cheapest in Oahu because it has all of the chain stores of the U.S. and a huge swap meet that is great to shop at.
Oahu also has the cheapest restaurants (also some of the most expensive ones and those in between) because there are so many restaurants to choose from.
Rental cars and gas are most likely cheapest on Oahu.
Ohana Hotels are inexpensive. www.ohanahotels.com
Most likely you could save some $$ by getting a package deal (air/hotel/car).

Oahu is cheaper than Maui. I got a cheaper flight into Honolulu vs. flight out of Maui. Car rental prices are about the same, but hotels on Maui are more expensive than Oahu. Honolulu has the same grocery stores as Mainland but the prices are slightly higher. We purchased food to pack lunches to eat while traveling the island. Jack in the Box seemed to be on every corner. Spent a week and only spent an average of $50 a day to eat.

Flying into Honolulu (on Oahu) is normally the cheapest. Seriously, camping or hostels are cheapest places to stay.
For hotels I like The Hawaiiana Hotel which is an independent local place (not part of a mega chain) and runs ~$120/night with a kitchenette, 2 pools, pretty gardens, 3 blocks from the beach at Waikiki.
I'm guessing there are cheaper, funkier places to stay on other parts of the island.

It is the easiest (and possibly cheapest) to fly in and out of Honolulu (island of Oahu), but our stay at Waikiki was our most disappointing Hawaiian vacation ever. It's too much like a city, and doesn't have the tropical feel of other places. Kona (island of Hawaii) is nice, but limited on inexpensive eating/shopping. There is a WalMart and Albertsons (and Costco) very close, so if you found a nice condo in Kona with a kitchenette you could really save a lot by making your own meals. The oceanfront at Kona is fabulous.
You might also consider Keihie on this island of Maui. Between Kaanapali beach and Wailea there is a LOT of development, so there are many, many restaurants to choose from, and some fairly inexpensive hotels/condos. As a bonus, the town of Lahaiana is wonderful for getting a feel of old Hawaii.
If you're traveling with kids, I've found that those air/hotel packages are not always the best bet. Kids generally stay free in hotels in their parents' room, so if you pay a package price for your kids, you're in essence paying their hotel fee as well.
Hawaiian Airlines has a great website for watching their fares, and about 2-3 months prior to when you want to travel, they usually start having some amazing sales. Be open to driving a bit farther to another airport. We usually fly out of Portland Oregon, but have been known on many an occasion to drive the extra 3 hours to Seattle to get a WAY cheaper flight.
Don't be afraid to bid for an airline ticket on priceline.com either. I once got four tickets from Portland to NYC for $175 each. They'll try to convince you on the website that your chances are extremely low at a low bid price, but who cares? All they can do is say no.
Good luck!

kparker, my camping suggestion really wasn't a joke. It would be ther cheapest option. There's a Hawaii camping expert on this board - I'm surprised they haven't chimed in.
Have a wonderful vacation in Paradise!
