Book about Per Se

In the NY Times Book Review today there is a review of a book about Per Se, written by a woman who worked there as a server. The review notes that religious characteristics are ascribed to Thomas Keller but to create an atmosphere of egalitarianism everyone, regardless of their position, is called chef. Everything seems to be done to extremes, the servers know the names of the cows that produced the butter. "Hello my name is Daisy and I will be your server tonight and this is my friend Elsie."

One of the butters that was served to us when we had lunch at the French Laundry came from a dairy in Vermont that produces butter only for Keller. We thought he was joking when our server said he knew the name of the cow that produced the butter we were eating. He wasn't joking.

I bet you a dinner at PerSe that you giggled your ass off when the waiter turned his back and then said, "Mooooo!"

Sorry gang, that was my joke. It was truthful, though, the server knows the name of the cow.
