There used to be volunteer personal guides who would show you their neighborhoods, but I don't see it at this link

The link above might be the one I was thinking of. It is not a Thanksgiving dinner, but it is a personalized tour for free of NYC. I have not personally done this.
I think you would have far better luck trying this through some organization or a personal contact and not in NYC, but in some other place. Most NYC apartments are tiny so those young people who work in the city will be going back home for Thanksgiving dinner anyway. People who live in more upscale places would be more likely to invite you if you had an introduction of some kind through a mutual acquaintance. Otherwise, many people will be at the parade, in the parade and not doing a traditional Thanksgiving at home as shown on all the idyllic images of this traditional American holiday that has grown to mythic proportions.

You can contact Big Apple Greeters, which is an org that has volunteers show you around a part of the city, explain the transit system etc. But - I very much doubt they would be able to provide Thanksgiving dinner. They could reco places for you to volunteer if you want to do that.

Three ideas -
1) look on meetup.com to see if there's a group meeting up for Thanksgiving. I checked and as of now there are two groups that have "Thanksgiving" in their descriptions. Contact the organizers and see what they have planned for the holiday.
2) check or post on craigslist as the time gets closer. I'm not sure how many people will invite total strangers into their homes, but there's always a chance.
3) join a Thanksgiving event at a church, etc. Here's an example of one -

It's their pre-Thanksgiving potluck and you'd have a chance to meet and interact with locals. Who knows? Maybe someone will invite you to join them on Turkey Day.
I guess I have 4 suggestions after all.

We enjoyed a wonderful prix fix meal here a couple of years ago. They have a special menu for Thanksgiving that was wonderful. We chose to eat around 4pm and that gave us time to enjoy the parade, eat and make a Broadway show without feeling rushed. We were staying a few blocks away in the Times Square area.
