Maui food - avoid Longhe's (sp?); the lobster tasted like it came out of a can. Go to Lahaina Fish House - ask for a seat "by the rail." The calamari was some of the best I've EVER had, and the fish was delicious. We were NOT impressed with David Pauls. It's supposedely the best restuarant on Maui, but the service was horrible. They placed us in a corner and when it became apparent that we weren't going to order wine (a good idea since the service in HI is slow in general - you'll fall asleep before your meal comes), we never saw the waiter again. Our bill was $150!!!! Trilogy is an excellent tour operator, but I would skip Molikini and find something else. We took the trip and it's a traffic jam out there there are so many boats. Do something more intimate.
Kaui - I would also skip A Pacific Cafe. Slow service, stuck us in a corner, food was so so. It was so hot in there, I nearly passed out. For a change, go to Bubba's burgers. Do a boat trip with Captain Zodiac to the Napali coast.
Oahu - La Mer is the only 5 star restaurant in the Islands. Friends went there and said it's fabulous. Pearl and the USS Missouri are a must. The Bowfin if you have time.
Have fun! Our favorite was Kauai. We just booked our return trip. Maui was kind of like LA - at least in Kaanapali.

Mahalo everyone,
I really appreciate all the suggestions. Thanks for the BI tour directions and the suggestions for books. Judi and I are leaving today! We are so excited. This will be an awesome experience. I am going to take a lot of pictures and write a journal. I will post a report when I get back in August..

If you want an experience you will never forget, please do yourself a favor and do a helicopeter ride. It was worth every penny and more. We still look at the video that was filmed while we were on board. We get that achy feeling to go back every time we look at it. We are going again in September, but wish it was today. We flew Blue Hawaiian and cannot recommend them enough. They are at the Kahului airport on Maui. We went up over Haleakela (volcano) and down around Hana and back up to west Maui. We saw the most amazing sights. It was like viewing the garden of Eden from a helicopter. Waimea is so beautiful. The birds eat right from your hand. You can walk these very easy trails that tell you what each plant is and you waterfalls, etc. Last year we went more than once so we went whale watching, which to me was a very spiritual experience. These are just a few of the things we like.

We just returned from a long trip to Hawaii and wish we had spent more time on Oahu. There is more to see and do on Oahu than the other islands.
In response to your question and in contrast with a prior poster we immensely enjoyed the Polynesian Cultural Center. The shows were outstanding and the employees are very kind. It was a wonderful start to a great vacation.
