In Maui I have done the Pipiwai Trail to Waimoku Falls (off Road to Hana) twice and love it! It's a about a one hour hike uphill, along a stream and through a beautiful bamboo forest to get to a waterfall. Look for my trip report and link to pictures.

I'm not much of a hiker, but I like these on O`ahu:
Manoa falls- very short and easy hike.
Wa`ahila Ridge- from St Louis Heights. Another easy hike. Great views as you are up on the top of a narrow ridge. You can start at Wa`ahila park and end up in the back of Manoa Valley.
