1st time Vegas, 29th anniv. Day trips??
My wife and I are flying out for our 29th, the 3rd week in January, (last year we celebrated our 27th with friends although it was actually our 28th). Isn't great when you've been married so long you can do something like that? At least we remembered the date!
Anyway, we're staying at the Luxor for 6 nights. (A neighbor that goes to Vegas annually, recommended). We have a Corvette rented on 2 separate days. We want to see Hoover Dam of course, but are interested in some out of the way places. We like taverns, micro breweries, and any kind of comfort food. We like local places, that welcome new faces.
We want to see a show, & take in the nightlife. That being said we still want to get off the beaten path. We may change our return flight so we can stay longer, but leave Vegas.
Any suggestions?

When you leave Hoover Dam, turn right onto Lakeshore Scenic Drive. Right and right again will get you on Northshore toward the Valley of Fire State Park. When you are done at the park, you can go west to get to I-15 back into the city.
Red Rock Canyon is about 20 miles west out Charleston.

If you are up for it - you can take a helicopter flight from Vegas to oversee the Grand Canyon And Red Rock is only about 15 minutes from Vegas - and while we like the Valley of Fire - that's about an hour out.
The Monte Carlos has a nice brewpub - but many of the Casinos do now. Just walking around center strip is great - seeing the Ballagio Fountains and the 27 foot Choclate fountains next to the Arboreteum inside Bellagio, walking through Paris, seeing the new mega sized City Center (take the tram from Bellagio or Monte Carlo?) - and on and on.
And you are close to the MGM Grand - where if you arrive when they first put the Lions out on display (10 or 11 AM) - they are the most active, and it's free.

And if you want to see the spectacular take a 3 hour drive to Zion NP.
You may want to sleep over.
I would rate zion way above Grand canyon and Hoover Dam any day of the week.
In fact I'd suggest you cut LV in half and go to Zion and Bryce.

IMOP--Death Valley, Zion, and Bryce all deserve a couple of nights stay. Grand Canyon deserves a one day/night stay. These are all at a minimum, certainly longer stays are great depending on what you want to do.
Red Rock Canyon and Valley of Fire would be a good day trip.
See the Ethel M Chocolate Factory in Vegas. Free tour and a free piece of candy at the end. Of course, you are going to end up buying a whole box of candy though.

While you could spend days in Death Valley, we have done it as a day trip from Vegas several times, and seen different parts of the park on each trip. My favorite way is to drive north on 95 to Beatty then go west over the ridge. You can take a side trip to Rhyolite, it is a ghost town with a house made out of bottles and takes just a couple of minutes to visit. Then stop at the pit toilets at the top of the mountain and walk across the street to look down at the valley, beautiful. Continue down and go south when you get to the bottom. Stop at Borax Works, VC, loop through Artists Pallet drive, stop at Devil's Golf Course and to to Badwater, the lowest point in the US. Then turn back and head towards Parumph with a stop at Zebriski point, then head back to Vegas. Do bring water and snacks and perhaps some sandwiches for lunch. This is a full day trip and will probably make you want to go explore more.
